Enchilada Pie is a recipe I found in my Cat Cora cookbook that I won at a celebrity chef event a few years ago. This a fun take on a Mexican dinner dish that feeds 4-6 (2 people with leftovers) and costs approximately $4.50/serving. I know because I added up the cost of all the ingredients (because I have too much time on my hands right now). The total was less than $20 for the whole dish!
Don't mind that I took the above picture after we'd eaten half of it.
That's just how good it is.
It's a good-sized ingredient list, but it's not all that hard to make.
List of Ingredients:
1 lb lean ground beef
1 medium onion, chopped
2 garlic cloves, minced
1 (10 oz) can enchilada sauce
1 (15 oz) can black beans, drained & rinsed
kosher salt
1 cup light sour cream
1 (4 oz) can chopped green chiles, drained
1/2 cup chopped fresh cilantro
1 (12 oz) jar green salsa
1 T. chile powder
3 cups broken tortilla chips
2 cups grated cheddar cheese
3 scallions, chopped (optional)
2 T. chopped pickled jalapenos (optional)
1 lime for garnish (optional)
1. Preheat the oven to 400.
This looks yummy! I made a crock pot dish called enchilada stack where you layer tortillas and the enchilada meat/bean mixture and cheese in 8 layers in a crock pot and melt it all together. It was awesome!

This looks amazing! There are always requests for enchiladas in my house but something about delicately rolling the tortillas always scares me. This would be a great alternative! Thanks for the idea! You got a new follower over here :)
