This is a really simple, healthy, delicious dinner that you can make any time. The recipe was given to me by my mother, and it's become a staple in our house. Plus, it's pretty cheap!
Serves: 2-4 (when Jordan and I make this, we always have leftovers)
Ingredients:
-4 butterfly boneless pork chops
-1 box of Stovetop stuffing mix (any flavor; I usually just buy 2 or 3 boxes at the store so we can keep some on hand at all times.)
-1 can of cream of mushroom soup (note: we don't like mushrooms all that much, so we use cream of celery)
-milk (enough to fill your 10.5-oz soup can; +2 points for no extra dishes to wash!)
-salt & pepper
Directions:
>Brown pork chops in a pan on the stove, using no oil, 2-3 minutes per side (just enough to get a touch of brown). They won't be extremely appetizing at this point, but just push through.
>Make stuffing mix according to box directions. Set aside. You can use any flavor that suits your fancy. This will take 5-6 minutes to make.
>Mix soup, milk, salt & pepper in a medium bowl.
>Lay pork chops side by side in a 9x13 pan. Spoon a ball of stuffing onto the top of each chop.
>Pour the soup mixture over the top and all around the sides.
>Bake for 1 hour (uncovered) @ 350 degrees. It will be done when the soup mixture begins to bubble and the stuffing gets crispy brown on top.
>Serve with a side of fresh green beans.

First of all, you had me at stuffing. Then, leftovers?! Yes please. Lol. Stuffing is my favorite food at thanksgiving..haha. And I'll use any excuse to eat it year round!

I tend to not like pork chops due to how dry or tough mine always end up. I am guessing the soup helps keep it tender? If so I really need to try this recipe.

I tried this and it was wonderful although the pork chops were somewhat tough. I am going to try this using pork tenderloin next time.

This was good. I had to make some changes, like the stuffing was frozen crockpot stuffing from Thanksgiving. And I had 6 loin chops so I used 2 cans of cream of chicken soup, 1 can of milk and about 1 cup of chicken broth. It probably would have been fine with 1 can of the soup, but my stuffing was so dry (at Thanksgiving)I worried that it wouldn't get moist enough. I have been looking for recipes to use that stuffing up, and this is a keeper. Thank you.
