Crock-Pot Chicken & Wild Rice (aka Jordan's new favorite meal)

10.22.2013

I've been killing it on Pinterest recipes lately. Like, for real. I actually started a "entrees I've tried and liked" board, which is where I put all the Pinterest recipes I've, you know, tried and liked.

This most recent recipe is sure to be a staple in our house for years to come. As in, it's in the Crock-Pot right now for the second time in just a few weeks. It's so easy and super super super delicious. We served it with a side of steamed corn. Hello, yum.

Ingredients Needed

3-4 chicken breasts (fresh or frozen)
1 can cream of mushroom soup (or other cream of soup variety)
1 onion
1 box long grain & wild rice (like Uncle Ben's)

Find the full recipe here.

It uses a grand total of 4 ingredients and no prep time except cooking the rice and chopping an onion. Throw it all in the crock-pot and be done! Seriously, make this.

See what else I've been Pinning!

I've been feeling self-satisfied, too, that I actually attempt a fair number of the Pinterest recipes I pin . . . now if I could just do that with the craft/diy ideas as well. : ) Thanks for the slow-cooker recipe--Crock-Pots are lifesavers.

I mentioned somewhere before that I've had my crockpot for about two years now and I've only used it once or twice! Crazy, I know! But this looks too yummy not to try.

Mmmmm, we are huge fans of wild rice, but it's really hard coming up with ideas to cook with it! I will have to remember this and pin it for later. :) I also have a board for food we've made and loved! Keepers have to kept. :)

Isn't it fulfilling to actually try (and like! cherry on the top) stuff that you've pinned?? I always think to myself, "See - pinning is a good use of time!" when that happens. :)

This looks delicious! Gotta love the slow cooker.

Our first 6 months of marriage using our crock pot was how we lived. I used it probably 5 times a week and I still probably use it 3 to 4 times a week! Trying this!

SO. I made this. Well, sort of, I tweaked it a little because I'm rebellious like that. I used 1 c. dried wild rice (the kind that takes like 45 minutes to cook) and dumped it all in at one time. Sprinkled with onion soup mix (to make up for the lack of a seasoning packet) and then poured in 3/4 can of chicken broth and *dundundunnnn* added half a block of cream cheese, sliced, on the top cream soup that was on top of the chicken. Cooked on low for about 6 hours and it was GUD.

I will say, it was not as pretty as yours. So, there. That's what happens when you're rebellious. ;)
