So, I'm going to join every other blogger out there and post a pumpkin recipe. 

To be honest, I'm not obsessed with pumpkin like everyone else seems to be. I probably wouldn't have cooked with pumpkin at all this fall except that my friend Justine was visiting from Illinois last weekend and brought this recipe with her. We ran the Color Run, and then we came home and made muffins. Then we ate them. Amen.

They were easy and delicious, and I thought I would share the recipe with you! This recipe for pumpkin chocolate chip muffins got Jordan's stamp of approval, and he doesn't usually like pumpkin flavor, so you know they've got to be good, which they are.

FYI, Justine said you can make a double batch and freeze them! Genius.

Pumpkin Chocolate Chip Muffins

Ingredients
3/4 cup brown sugar
1/4 cup vegetable oil
2 eggs
1 cup pumpkin puree
1/4 cup water
1 1/2 cup flour
3/4 t. baking powder
1/2 t. baking soda
1/4 t. ground cloves
1 1/4 t. ground cinnamon
1/4 t. salt
1/2 t. ground nutmeg
1/2 cup semisweet chocolate chips

Directions
Preheat oven to 400 degrees. 
Mix sugar, oil & eggs. 
Add pumpkin puree & water. 
In a separate bowl, mix together dry ingredients. Add to wet mixture. 
Stir in chocolate chips. 
Fill muffin cups 2/3 full with batter.
Bake for 20-25 minutes or until a toothpick comes out clean.

Yum! These sound so tasty! I don't usually love banana bread, but my friends mom makes it with chocolate chips and it's amazing. So I am guessing I will also love these pumpkin muffins with chocolate chips! :)
