I don't know what Jordan and I would do without the chicken & rice bowl. It's one of those meals I cook when I don't know what else to make. This is a skillet meal that has simple ingredients you're almost always going to have on hand, and it's super easy. Plus, it uses 1 pot and 1 skillet. I love an easy cleanup!
The best part is, you can customize it easily depending on what you like or have on hand AND you really don't even need a recipe once you make this a few times. Now that's cooking from your heart.
Okay, let's go.
Ingredients
2-4 servings uncooked instant rice
1/2 chopped onion
1/2 chopped green pepper
olive oil
2 cups chopped, cooked chicken (you can use frozen or fresh)
1/2 cup frozen corn
1/2 cup frozen peas
1 t. basil
1 t. rubbed sage
salt & pepper
shredded cheddar cheese* (optional)
shredded cheddar cheese* (optional)
Directions
> Cook rice according to package instructions.
>While the rice is cooking, saute the green pepper and onion in a large skillet with the olive oil (2-3 minutes).
>After the vegetables are tender, add the chicken, corn, peas, basil, & sage to the skillet.
>Cook until everything is heated through.
>Stir in the rice, salt, & pepper.
*A few notes:
-I always stir in some cheddar cheese, just to give the whole dish a bit of cheesy goodness.
-You can leave out the onion and green pepper if you don't have any or don't like them.
-For this dish, Jordan and I prefer brown rice. It's healthier for one, but it also adds some stickiness to the dish that is just delicious. If you have extra time, try making this with regular rice (as in, not instant).
-Finally, I like to add a couple dashes of soy sauce and/or Worcestershire sauce in with the corn and peas as they're cooking. It adds a stir-fry feel that brings everything together.

This looks so good. Would totally do it with the brown rice. Love that you added Soy Sauce and Worchester Sauce to the peas. Sure it gives it a little extra flavor. Love it!
